Last Spring my 16 year old decided she was Vegan so for a while, finding meals for both her and the rest of the family proved difficult. I’ve learned over the last few months how to incorporate Vegan meals for her and make them “acceptable” for the carnivores in the family.
What I like about this recipe is that it makes a great base for experimentation, doesn’t necesarrily have to be made Vegan and you can essentially use ingredients of your preference to make it your own. 1 box uncooked pasta 8-16 lbs (I used brown rice pasta)
1 tablespoon olive oil
1 white onion
3 tablespoons wheat flour
2 cups vegetable broth
1 tablespoon soy sauce, tamari or liquid aminos
1 teaspoon lemon juice
1 tablespoon tomato paste
1.5 lbs of mushrooms (I used a mix of sliced and button)
1/4 cup vegan sour cream
salt/pepper and spices to taste
Cook the noodles per package instructions, drain and set aside. Add oil to a large saucepan on medium heat and sautee the onions until translucent, add the flour and cook for about a minute while stirring to ensure it doesn’t burn.
Add broth, soy sauce, lemon juice and tomato paste and cook for about a minute; add mushrooms and cook for 5 minutes until mushrooms are tender then add in sour cream and noodles and seasonings to taste.
